Summer Strawberry and Lime Coolers with Summer Mango Pineapple and Passianna

Summer-Strawberry-and-Lime-Coolers-with--Summer-Mango-Pineapple-and-PassiannaUse a whole punnet of fresh strawberries and purée in a blender with two tablespoons of caster sugar and a juice of one large lime until very smooth. Check sweetness and add more sugar if necessary.

Pour the puree in the bottom of long tall glasses filling to at least one third, cover with ice, and if you like a shot of vodka, top with soda water and serve with long straws garnished with fruit skewers and fresh mint.

Take the flesh of a large mango, being careful to avoid any fibres, place in a food processor with ½ a very ripe chopped pineapple. Add two tablespoons of caster sugar and blend until smooth. Add the flesh of two scooped out passion fruits and adjust sweetness and acidity (you may want to add a little lemon juice.) Pour into long glasses to about half and top with ice, Prosecco or soda and garnish as above.
